Rice
with Chicken

Ingredients
2 cup rice (preferably Basmati)
3/4 kg chicken
10 cloves garlic, minces
5 cup water
1/4 cup corn oil
1/2 tsp cumin seeds
1/4 cup chopped onions
1 tsp coriander powder
1 tsp curry powder
2 tsp salt
2 cinnamon sticks
2 pods of black cardamoms
5 cloves
Method
Clean, wash, and soak rice for 20 minutes. Clean chicken
and cut into medium-size pieces. Mix garlic with 2 cups
water and set aside. Heat oil; saute cumin seeds and
onions until they are dark brown. Add 1/4 cup garlic
water and stir. When the water dries, add chicken and
all other spices, stirring constantly. Add some garlic
water and fry chicken with spices. Keep on adding garlic
water until chicken is almost done.
Drain
rice and add to chicken; stir in 3 cups water. Cover
pan and cook on low heat until rice is done. Serve hot
with yoghurt or hot pickles or salad. Serves 6.
